Gooseberries are wonderful subjects to paint - and to eat! After finishing this painting I was tempted to make a classic Gooseberry Fool - try it!

Gooseberry Fool
Top and tail one kilo of large ripe gooseberries. Put them in a heavy pan with about one centimeter of water and some sugar to taste. Cook gently until just soft and then blitz in a blender or whatever to a rough puree. Mix with an almost equal amount of thick cream or a mixture of custard and cream and chill. Divine!
